the thing is, when I'm cooking I often don't measure spices. (or really much of anything.) I just throw stuff in until it tastes good, eyeballing this and that. which is why I will never be able to duplicate the chicken chili I just made. WHY DON'T I THINK AHEAD ON THESE THINGS. (dear god this is so good.)
